Wraps are a favorite quick weeknight meal—they’re simple to prepare and full of flavor. For this recipe, chicken tenders are marinated in Italian dressing and then grilled for a bright, savory taste. If you prefer, use precooked Italian-style chicken strips for an even faster option. Both approaches work well. A variation you might enjoy is adding pepperoni for a pizza-like twist, inspired by the Chicken Pizziola sandwich I tried recently.
Chicken Parmesan Wrap
(Printable Recipe)
1 lb chicken tenders
3/4 cup Italian dressing
1 jar pizza sauce (about 1 to 1 1/2 cups)
6 mozzarella cheese slices
Grated Parmesan cheese, to taste
6 tortillas (large)
Prepare the chicken:
Place 1 lb chicken tenders in a bowl or resealable bag and pour 3/4 cup Italian dressing over them. Marinate at least one hour, or longer for more flavor. Grill the tenders over medium heat until fully cooked, or sauté them in a skillet with a little oil. Once cooked, chop or slice the chicken for easier filling. Refrigerate any extra chicken for later use.
Assemble the wraps:
Lay a tortilla flat. Start with one slice of mozzarella, spread a spoonful of pizza sauce over the cheese, add a portion of the chopped chicken, and finish with a sprinkle of grated Parmesan. Fold or roll the tortilla to enclose the filling.
Grill the wraps:
Place the assembled wrap in a heated grill pan or skillet. Use a grill press or heavy spatula and cook until the tortilla is golden and crisp, then flip and brown the other side. Remove when cheese is melted and the wrap is heated through. Repeat with the remaining tortillas and fillings.
These Chicken Parmesan Wraps are versatile—add vegetables, herbs, or a few pepperoni slices for a different flavor profile. They make a great lunch, easy dinner, or portable meal to enjoy at home or on the go.
