This week flew by. I realized I didn’t even mention last week that my youngest graduated from high school. It’s been a bittersweet milestone—no more parent-teacher conferences, proms, school picture days, disclosures to sign, or sports seasons. Watching your kids grow up so fast is emotional, and I’m still adjusting to the change.
Food always comforts me, so let’s talk recipes. I hadn’t made Chicken Satay with Peanut Sauce in a long time and I can’t wait to enjoy it again—honestly, I could drink that peanut sauce. With warmer weather here, I’m reaching for my slow cooker and Instant Pot more often, so you’ll see several slow-cooker and Instant Pot dinners in this plan. Our family can’t get enough of the Creamy Tacos—they’re a regular favorite.
