Like all of my weekly meal plans, this free Meal Plan 91 offers seven satisfying dinners plus ideas for breakfast, lunch, and snacks. It also includes meal-prep suggestions and a shopping list to make home-cooked meals easier and more affordable.

Dinner Recipes

  • Sunday: Stuffed Meatloaf with Parsley Potatoes (add a salad or steamed vegetables if desired)
  • Monday: Instant Pot Cabbage Soup with bread or rolls

Tips for This Week’s Meal Plan

  • Add more vegetables: Make a large salad on Sunday and use the extra toppings for tacos. Serve salad alongside meatloaf, soups, and lasagna. For an economical option, serve cooked frozen vegetables with meatloaf and lasagna.
  • Prepare sausage for lasagna: Set aside half the Italian sausage to add to the lasagna. If you have time, sauté it now so the lasagna can be quickly assembled and baked later in the week.
  • Monday: Reserve half the head of cabbage to use as taco topping later in the week. Consider red potatoes for the parsley potatoes on Sunday.
  • Tuesday: After making chicken tacos, save half the chicken to serve over rice on Thursday. Extra shredded chicken also works well in quesadillas for easy lunches. Use leftover cabbage to top tacos.
  • Wednesday: Adding meat to lasagna is optional, but using the remaining ½ pound of sausage is recommended. You can also add an extra ½ pound of ground beef if preferred.
  • Thursday: Cook extra rice and save half for the chicken and bok choy stir fry on Saturday.
  • Friday: If you don’t have a parmesan rind for soup, you can buy one at the cheese counter or save the rind from a fresh wedge when preparing the lasagna.
  • Saturday: Use leftover vegetables—carrots, cabbage, or celery—in the stir fry. If you add bok choy, toss any extra into ramen for quick lunches.
  • General tip: Buy a baguette or crusty bread to serve with soups and stretch meals. If you prefer homemade, make a no-knead whole wheat Dutch oven bread when time allows.
  • No Instant Pot? Cook rice on the stove. For cabbage soup, sauté vegetables in a large pot, add broth, seasonings, tomatoes, cabbage, and potatoes, bring to a boil, then simmer until potatoes are tender and cabbage is wilted (about 40 minutes). Finish with lemon juice.
