This Ground Beef Stroganoff was one of my favorites — economical, comforting, and quick to prepare. It stretches a single pound of ground beef into a satisfying meal thanks to a creamy, savory gravy with tender mushrooms and onions.

Traditionally served over egg noodles, I’ve also made this with rotini when egg noodles weren’t available. The idea is simple: adapt with what you have and keep feeding the people you love. Warm, home-cooked meals bring comfort and connection, especially when times are challenging.

  • 1 pound ground beef
  • 1 Tablespoon olive oil and 1 Tablespoon butter
  • 8 ounces sliced white mushrooms (optional)
  • 1 cup sour cream

  • 1/2 cup red cooking wine (optional; substitute beef broth)
  • 1/3 cup freshly chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1 Tablespoon dried parsley or 2 Tablespoons fresh chopped parsley
  • 1 lb rotini pasta or egg noodles, cooked per package instructions

How to Make Ground Beef Stroganoff

Bring a large pot of salted water to a boil for the pasta. While the water heats, prepare the stroganoff.

In a large skillet over medium-high heat, add the olive oil and butter. Add the sliced mushrooms and chopped onion and sauté until the mushrooms soften and the onions become translucent. Add the minced garlic and sauté one minute more. (Tip: you can break the mushrooms into smaller pieces with your spoon while they cook if you prefer smaller bites.)

Add the ground beef to the skillet and brown it with the mushrooms, onions, and garlic. Cook until the beef is no longer pink, then drain any excess fat if needed. While the beef cooks, add the pasta to the boiling water and cook according to package directions until al dente.

Finishing the Hamburger Gravy for Stroganoff

Season the beef mixture with salt, black pepper, garlic powder, onion powder, oregano, and parsley. Stir to combine.

Reduce the heat to medium and add the can of cream of mushroom soup, the sour cream, and the cooking wine (or beef broth). Stir until the sauce is smooth and combined. Lower the heat to low and simmer for about 5 minutes, stirring occasionally, to let the flavors meld.

Finishing up Ground Beef Stroganoff

When the pasta is cooked al dente, drain it and return it to the pot. Pour the warm beef and mushroom gravy over the pasta and toss to coat. Tip: adding the gravy directly into the pasta pot cuts down on dishes and keeps things simple.
