Crispy Oven-Baked Garlic Fries Recipe You’ll Love

In college, one of my favorite spots was Silvergreens, where I always ordered their irresistible garlic fries as a side. I don’t make fries often because of the high fat content and the potential for acrylamide formation when potatoes are baked or fried, but every so often I can’t resist. This baked garlic fries recipe is my adaptation of Ellie Krieger’s version from the Food Network.

Ingredients
  • 3 cloves garlic, minced
  • 2 tbsp canola oil
  • 3 large baking potatoes, peeled
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp parsley, chopped
Instructions
  1. Preheat the oven to 450°F (230°C).
  2. Cut the potatoes into 1/4-inch fries using a julienne blade on a mandoline or a sharp knife. Sliced potatoes
  3. In a large bowl, combine the oil, minced garlic, salt, and pepper. Add the potato strips and toss until evenly coated. Potatoes tossed with oil and garlic
  4. Spread the potatoes in a single layer on a greased baking sheet; avoid overcrowding so they crisp well.
  5. Bake for about 40 minutes, turning once after 20 minutes, until the fries are golden and crisp on the edges.
  6. Remove from the oven, toss with chopped parsley, and serve hot. If desired, blot any excess oil with a paper towel before serving.
