Crisp Pea and Feta Salad with Lemon Mint Dressing

This feta and pea salad is a simple, flavorful side that comes together in minutes—perfect when you need something quick to accompany a meal.

I discovered this recipe a while back and was eager to try it because peas are usually served very plainly in our house. After tweaking the original a bit, I found the result delicious. Even my husband, who claims not to like peas, enjoyed it—after one reluctant bite he quietly went back for more.

Feta and Pea Salad

With just a few pantry staples you can turn frozen peas into a bright, tangy salad. The dressing balances olive oil, red wine vinegar, honey and Dijon mustard, and the radishes and green onions add crunch and freshness. Crumbled feta brings a salty, creamy finish that ties everything together.

Ingredients

  • 1 pound bag frozen peas thawed
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • salt and pepper to taste
  • 3 radishes thinly sliced
  • 3-4 green onions chopped
  • 1/3 cup crumbled feta cheese

Instructions

  • In a medium bowl, whisk together the extra-virgin olive oil, red wine vinegar, honey, Dijon mustard, salt and pepper until well combined.
  • Add the peas, radishes, green onions and feta. Gently toss to coat everything with the dressing. Serve immediately or chill briefly before serving.

Notes

This recipe was adapted from a classic feta-and-pea preparation and works well as written or with small variations—try adding fresh mint or a squeeze of lemon for extra brightness.
