This Mango Frozen Yogurt began as a practical solution to a fridge full of plain yogurt. After asking for ideas, many suggestions poured in—frozen yogurt quickly became my favorite choice.

The key to a smooth texture without an ice cream machine is regular whisking while the mixture freezes. Start stirring about 45 minutes after it goes into the freezer, then again at 1 hour 15 minutes and once more at 1 hour 45 minutes. These intervals help break up ice crystals and yield creamier frozen yogurt.
In the photos you’ll see a semi-frozen version; I enjoy a softer, scoopable texture and often photograph it at that stage. If you prefer firmer frozen yogurt, simply allow it to freeze longer.
This recipe produces a flavor reminiscent of a mango lassi—bright, tangy, and slightly sweet. A finish of crushed pistachios adds a delightful crunch and a splash of color that complements the mango beautifully. While the nuts are optional, they make a lovely topping.

Ingredients
- 1 cup organic plain whole milk yogurt (it makes all the difference)
- ½ cup milk (I used whole milk)
- 5 tablespoons of sugar (or to taste)
- 2 ripe mangos, peeled and diced
- 3 ½ tablespoons of honey
- Pinch of salt (optional)
Instructions
Place all ingredients in a blender and blend until smooth, about two minutes.
Transfer the mango-yogurt mixture to a freezer-safe bowl, cover, and place in the freezer. Set a timer for 45 minutes.
At 45 minutes, remove the bowl and whisk the mixture vigorously (use a whisk, not a fork) to break up forming ice crystals. Return to the freezer.
Repeat whisking at 1 hour 15 minutes and again at 1 hour 45 minutes. Each round of whisking helps create a smoother, creamier texture.
Allow the mixture to fully firm up to your preferred consistency. When ready, scoop the Mango Frozen Yogurt into bowls and, if desired, top with crushed pistachios for a crunchy contrast.
