With a recipe this short—only a handful of ingredients—quality matters. Use a sharp, flavorful cheddar so the twists really sing. Think of it like cooking with a good wine: a better base ingredient gives you a far superior result.

My go-to is a sharp yellow cheddar, but any high-quality aged cheddar will work. If you like a little heat, try a jalapeño cheddar for a spicy twist.

- 1/2 cup finely grated sharp cheddar cheese (about 2.5 oz by weight)
- 1/2 cup all-purpose flour (about 2.5 oz by weight)
- 1/4 tsp sea salt
- 1/4 tsp cayenne pepper

- 1 egg white (about 2 tbsp)

Combine the grated cheddar, flour, sea salt, and cayenne. Use your fingers to mix and break up any clumps so the mixture is evenly distributed.

Add the cold cubed butter and quickly work it into the dry ingredients with your fingertips until the largest butter pieces are about pea-sized. Take care not to melt the butter.
