How to Make Cajun Prawn Tacos

Step One – Make the mango salsa

  • In a bowl combine the mango, green pepper, red chilli, vine tomatoes, coriander and the juice of one lime. Season with salt and black pepper. Store in an airtight container — the salsa can be made up to a day ahead.

Step Two – Cook the Cajun prawns

  • Heat the olive oil in a frying pan, add the prawns, sprinkle over the Cajun seasoning and season with salt and pepper. Fry over high heat until the prawns turn pink and are cooked through, which only takes a few minutes.

Step Three – Warm the tortillas

  • Warm the flour tortillas according to the packet instructions while the prawns cook.
