What ingredients you need to make this BBQ Chicken Foil Packets:
4 chicken drumsticks (with skin)
4 chicken thighs (with bone and skin)
1 tsp salt
1 Tbsp chipotle spice
½ tsp garlic powder
3 C frozen mixed vegetables
½ C BBQ sauce
Garnish: Fresh parsley, chopped
How to make these BBQ Chicken Foil Packets:
- Preheat the oven to 425°F (220°C).
- Cut four pieces of heavy-duty aluminum foil, about 8 x 12 inches each.
- Lay the foil sheets flat on a work surface.
- Place about 3/4 cup of frozen mixed vegetables in the center of each foil sheet.
- Season both sides of the drumsticks and thighs with salt, garlic powder and chipotle spice.
- Brush each piece of chicken with BBQ sauce so it is well coated.
- Arrange a drumstick and a thigh on top of the vegetables on each foil sheet.
- Fold the foil over the chicken and vegetables and roll the edges to seal the packet, leaving a little space inside for steam circulation.
- Place the sealed packets on a baking sheet.
- Bake in the preheated oven for 50–55 minutes.
- Carefully open one packet and check that the chicken is cooked through (juices should run clear and an internal temperature of 165°F/74°C is recommended).
- If cooked, remove the baking sheet and carefully unfold the foil packets.
- Brush the chicken with additional BBQ sauce.
- Return the chicken to the oven, uncovered, and bake for about 5 more minutes to caramelize the sauce.
- Remove from the oven, transfer the chicken and vegetables to plates, and garnish with chopped fresh parsley.
