Ingredients

  • 1/2 cup finely grated sharp cheddar cheese (about 2.5 oz by weight)
  • 1/2 cup all-purpose flour (about 2.5 oz by weight)
  • 1/4 tsp sea salt
  • 1/4 tsp cayenne pepper
  • 3 tbsp unsalted butter cold, cubed
  • 1 egg white (about 2 tbsp)

Instructions 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Combine the grated cheddar, flour, sea salt, and cayenne. Use your fingers to mix and break up any clumps so the mixture is evenly distributed.
  • Add the cold cubed butter and quickly work it into the dry ingredients with your fingertips until the largest butter pieces are about pea-sized. Take care not to melt the butter.
  • Stir in the egg white until evenly combined. The dough will be crumbly but should hold together when gently pressed—avoid overworking it.
  • Lightly flour a work surface and roll the dough to about 1/8 inch thickness.
  • Use a pizza cutter or sharp knife to slice the dough into long strips. Twist each strip and place on the prepared baking sheet, spaced slightly apart.
  • Bake for about 10 minutes, or until the twists are crisp and lightly golden. Let cool briefly before serving.
