Chewy No-Bake Blondies Recipe — Quick Bar-Style Dessert

These chewy no-bake blondies are a summer favorite: simple, healthy date bars made with minimal ingredients and big flavor.

They have a soft, chewy texture and a sweet, slightly salty profile that’s reminiscent of a candy bar. Dates lend a caramel-like sweetness while walnuts add a pleasant nuttiness and crunch. These bars are so good that I’ve already made several batches—and I’m planning another soon.

Why Make These Chewy No Bake Blondies

These blondies are extremely easy and require no oven—perfect for warm days or when you want a quick, satisfying treat.

They’re allergy-friendly: plant-based and gluten-free, with no added refined sugars. Sweetness comes from maple syrup and dates, keeping the bars naturally sweet without processed sugar.

The bars take about 10 minutes to prepare. I prefer them chilled from the refrigerator, but they also freeze well. Refrigerated bars keep about a week in an airtight container; frozen, they last much longer. The maple syrup pairs beautifully with the walnuts for balanced sweetness and texture.

Ingredients For These Chewy No Bake Blondies

Ingredients to make this recipe in small bowls.

Almond flour forms the firm but tender base that’s easy to bite.

Almond butter provides a mild, creamy flavor that lets the dates and walnuts shine; peanut butter will work but has a stronger taste.

Coconut oil should be melted so it blends evenly with the almond flour.

Vanilla or almond extract adds a warm aroma and enhances perceived sweetness.

Maple syrup gives natural sweetness and complements the nuts and dates.

Salt brightens the flavors with a subtle contrast.

Walnuts add crunch and a rich, nutty note—substitute another firm nut if preferred.

Dates are the primary sweetener and create a sticky, caramel-like filling.

White or milk chocolate chips are optional; a drizzle makes the bars more dessert-like but they’re delicious without it.

How To Make This Recipe

Clear bowl with batter in it and pressed into a bread tin.

Step One. Make the base by mixing almond flour, almond butter, melted coconut oil, maple syrup, and vanilla extract until thick and even. Line a loaf pan with parchment and press the base into the bottom. Smooth it out and place the pan in the freezer while you prepare the top layer.

Step Two. If your dates are very dry, soak them in boiling water for about 5 minutes, then drain, cool, and pit them. Fresh sticky dates are easier to work with.

Step Three. In a food processor combine walnuts, pitted dates, and salt. Pulse until the mixture forms a sticky, uniform paste.

Step Four. Remove the base from the freezer and press the sticky date-walnut mix over it, breaking it into pieces and smoothing it to an even layer. Return to the freezer for about 10 minutes to set.

Step Five. For a chocolate drizzle, melt chocolate chips with a little coconut oil in short bursts in the microwave, stirring until smooth. Drizzle over the set bars, allow to firm up, then slice and serve.

Tips For This Recipe

Are these bars sweet?

Yes—these bars are satisfyingly sweet and make a rich dessert or a filling snack between meals.

Why use almond flour?

Almond flour works especially well in no-bake treats because it stays moist and yields a pleasant, tender texture after chilling.

When lining your loaf pan, clip the parchment to the sides to keep it in place while you press layers in; this makes cleanup easier and helps the bars release cleanly.

Because the recipe is chilled in stages, allow time for the first layer to set and place the pan on a flat shelf in the freezer so it sets evenly.

My dates are really dried out

Soak dried dates briefly in hot water to soften them; fresh, sticky dates are easiest to process.

Make Ahead & Storage Tips

Refrigeration or freezing both work well. Store the bars in an airtight container or zip-top bag. They keep about a week in the fridge and much longer in the freezer—thaw briefly before serving if frozen.
