One of the coziest winter meals is BBQ Chicken Foil Packets. This easy, wholesome dinner combines flavorful chicken with fresh-tasting vegetables for a simple, satisfying meal.

What ingredients you need to make this BBQ Chicken Foil Packets:

4 chicken drumsticks (with skin)
4 chicken thighs (with bone and skin)
1 tsp salt
1 Tbsp chipotle spice
½ tsp garlic powder
3 C frozen mixed vegetables
½ C BBQ sauce
Garnish: Fresh parsley, chopped

How to make these BBQ Chicken Foil Packets:

  1. Preheat the oven to 425°F (220°C).
  2. Cut four pieces of heavy-duty aluminum foil, about 8 x 12 inches each.
  3. Lay the foil sheets flat on a work surface.
  4. Place about 3/4 cup of frozen mixed vegetables in the center of each foil sheet.
  5. Season both sides of the drumsticks and thighs with salt, garlic powder and chipotle spice.
  6. Brush each piece of chicken with BBQ sauce so it is well coated.
  7. Arrange a drumstick and a thigh on top of the vegetables on each foil sheet.
  8. Fold the foil over the chicken and vegetables and roll the edges to seal the packet, leaving a little space inside for steam circulation.
  9. Place the sealed packets on a baking sheet.
  10. Bake in the preheated oven for 50–55 minutes.
  11. Carefully open one packet and check that the chicken is cooked through (juices should run clear and an internal temperature of 165°F/74°C is recommended).
  12. If cooked, remove the baking sheet and carefully unfold the foil packets.
  13. Brush the chicken with additional BBQ sauce.
  14. Return the chicken to the oven, uncovered, and bake for about 5 more minutes to caramelize the sauce.
  15. Remove from the oven, transfer the chicken and vegetables to plates, and garnish with chopped fresh parsley.
