Fig Newton Energy Bites: No-Bake Date and Fig Snack Balls

Since I launched Every Last Bite nearly seven months ago, I’m proud of the variety of recipes I’ve shared: salads, soups, starters, dips, breads, bars and cookies. Still, week after week the posts that get the most attention are my Apple Pie, Coconut & Ginger and Banana Bread energy balls — and I don’t blame you, they’re really good.

Energy balls have definitely become a recurring theme on the site, and I’m honestly a bit amused by that. After years of cooking, I usually pride myself on more technical recipes, so it’s funny that the easiest 10-minute energy ball recipes are among the most loved. If quick, flavorful snacks are what people want, I’ll happily keep making them.

DSC_1341I’d been trying to recreate fig newtons for a while, and it turned out to be trickier than expected. After a couple of failed, crumbly attempts I decided to pivot — the bowl of figs wasn’t going to win. So I turned them into energy balls instead. Seven minutes later I was rolling them into neat little rounds and feeling very satisfied. Mission accomplished.

These Fig Newton Energy Balls really do capture that familiar flavor. They’re full of chunky figs, crunchy seeds and toasted nut pieces for texture. They keep for about a week in the fridge, though I often eat them straight from the freezer on my way to work, before a workout, or as a quick evening treat.

Fig Newton Energy Balls

Servings: 20 -24 balls

Ingredients 

  • 2 cups dried figs
  • 1/4 cup dried dates
  • 1 tsp vanilla
  • 2 tsp honey or other sweetener
  • pinch of salt
  • 1 cup walnuts toasted & chopped
  • 1/4 cup pecans toasted & chopped

Instructions 

  • Combine the dried figs, dates, honey and vanilla in a blender or food processor. Blend until the mixture is broken down and well combined.
  • Add the toasted pecans and walnuts, then pulse until the nuts are in small bits and evenly distributed.
  • Scoop tablespoon-sized portions of the mixture and roll into balls. If the mixture is sticky, wet your hands slightly to make rolling easier.
  • Store the balls in a sealed container in the fridge for about a week, or freeze them for longer storage — they keep well for a month or more in the freezer.
