Banana Black Sesame Eggless Scones

Ingredients

For the Scones:

  • 2 cups spelt flour or all-purpose flour
  • 1 tablespoon baking powder
  • 3 tablespoons organic coconut sugar
  • ½ teaspoons salt
  • 2 tablespoons black sesame seeds
  • ½ cup mashed banana
  • ¼ cup canned full fat coconut milk
  • ¼ cup tahini (sesame seed paste)
  • 1 tablespoon pure vanilla extract

For the Sweet Tahini Glaze (optional):

  • 3 tablespoons tahini
  • ¼ cup pure maple syrup

Instructions

For the Scones:

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, whisk together the flour, baking powder, coconut sugar, and salt. Stir in the black sesame seeds.
  • In a larger bowl, combine the mashed banana, coconut milk, tahini, and vanilla.
  • Fold the dry ingredients into the wet ingredients and mix until just combined. The dough should be slightly sticky but form a ball. If dry bits remain, add 1 tablespoon of coconut milk at a time (you may need 1–3 tablespoons total) until it comes together.
  • Turn the dough onto a lightly floured surface and shape into a flat disc about 1 inch thick. Cut the disc into eight wedges.
  • Place the wedges on the prepared baking sheet and bake 12–14 minutes, until golden. Transfer to a wire rack to cool before glazing.

For the Sweet Tahini Glaze:

  • In a small saucepan over low heat, whisk tahini and maple syrup until it thickens into a glossy sauce, about 5 minutes. Keep the heat low and stir to prevent scorching.
  • Drizzle the glaze over cooled scones and serve.
