This is a go-to drink for hot days and a crowd because it’s easy to serve to people with different preferences—add tequila for those who want a cocktail and skip it for kids or anyone avoiding alcohol.

Make a large batch of watermelon juice by pureeing and straining fresh watermelon into a pitcher. Arrange the pitcher with a bucket of ice, a small dish of salt, a few cans of Sanpellegrino (any flavor works; pomegranate-orange is my favorite), and a bottle of tequila so guests can mix their own drinks.

If you prefer a blended, slushy-style drink, freeze the watermelon juice or blend fresh juice with a handful of ice and a pinch of salt, then pour into a glass and top with Sanpellegrino for bubbles.

Ingredients

  • A small 3 lb watermelon (or a portion of a larger watermelon)
  • 16 oz tequila (optional)
  • 16 oz Sanpellegrino (any flavor; pomegranate-orange recommended)
  • Salt

Instructions

Make the watermelon juice:

  1. Cut the watermelon flesh away from the rind and add to a blender. Puree until smooth, then strain the puree through a fine mesh sieve into a pitcher to remove pulp and seeds.

To assemble each drink:

  1. Combine 2 oz watermelon juice with 2 oz tequila (omit tequila for a non-alcoholic version). Pour over ice and top with about 2 oz Sanpellegrino. Finish with a pinch of salt to enhance the flavors.

For a frozen spritzer, blend watermelon juice with a handful of ice and a pinch of salt until slushy, pour into a glass, and finish with a splash of Sanpellegrino.
