In college, one of my favorite spots was Silvergreens, where I always ordered their irresistible garlic fries as a side. I don’t make fries often because of the high fat content and the potential for acrylamide formation when potatoes are baked or fried, but every so often I can’t resist. This baked garlic fries recipe is my adaptation of Ellie Krieger’s version from the Food Network.

Ingredients
- 3 cloves garlic, minced
- 2 tbsp canola oil
- 3 large baking potatoes, peeled
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp parsley, chopped
Instructions
- Preheat the oven to 450°F (230°C).
- Cut the potatoes into 1/4-inch fries using a julienne blade on a mandoline or a sharp knife.

- In a large bowl, combine the oil, minced garlic, salt, and pepper. Add the potato strips and toss until evenly coated.

- Spread the potatoes in a single layer on a greased baking sheet; avoid overcrowding so they crisp well.
- Bake for about 40 minutes, turning once after 20 minutes, until the fries are golden and crisp on the edges.
- Remove from the oven, toss with chopped parsley, and serve hot. If desired, blot any excess oil with a paper towel before serving.
