This casserole works for breakfast, brunch, lunch or an easy dinner. The Sausage, Egg and Cheese Tater Tot Casserole is simple to assemble and scales up well—double the ingredients and bake in a 9×13 pan. Leftovers reheat beautifully: cut into squares, store in airtight containers, and reheat for a quick grab-and-go meal. Serve with ketchup if you like a classic Tater Tot finish.
What you’ll need to make Sausage Egg and Cheese Tater Tot Casserole:
- 1 pound ground sausage
- 6 eggs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 cup whole milk or cream
- 8 ounces sharp cheddar cheese, grated
- 1 pound frozen tater tots or mini tater tots
- Fresh parsley (optional, for garnish)

Can I double this recipe?
Yes. Doubling the ingredients and baking in a 9×13-inch casserole dish works well. The cooking time remains about the same—just keep an eye on the top to ensure the cheese is melted and the tater tots are heated through.

A comforting breakfast casserole that blends seasoned sausage, fluffy eggs, sharp cheddar and crispy tater tots—easy to make ahead and reliably delicious.
Ingredients
- 1 pound ground sausage
- 6 eggs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 cup whole milk or cream
- 8 ounces sharp cheddar cheese, grated
- 1 pound frozen tater tots or mini tater tots
- Fresh parsley (optional for garnish)
Instructions
Preheat the oven to 350°F (175°C).
In a skillet, cook and crumble the sausage over medium heat until browned and cooked through. Drain any excess grease and set the sausage aside.
In an 8×8-inch baking dish, whisk together the eggs, onion powder and garlic powder. Stir in the milk or cream until evenly combined.
Fold in about three-quarters of the cooked sausage and half of the grated cheddar, mixing so the ingredients are evenly distributed.
Arrange the tater tots in a single or slightly overlapping layer on top of the egg mixture.
Bake for 45 minutes, then remove from the oven and sprinkle the remaining cheese and sausage across the top.
Return to the oven and bake 5–10 more minutes, or until the cheese is melted and the tater tots are heated through.
Garnish with chopped fresh parsley if desired, slice, and serve warm.
Notes
You can assemble this casserole the night before, cover it, and refrigerate. Bake the next morning straight from the fridge—add a few extra minutes to the baking time if needed.
