With so many muffins on hand, it felt natural to try scooping ice cream between muffin halves—and the result was brilliant. Chocolate-Strawberry Muffin Ice Cream Sandwiches

Ingredients
- 1 batch of 12 Healthy Double Chocolate Muffins with Fresh Strawberries, baked and cooled completely
- 1 cup + 2 tablespoons of your favorite reduced-fat vanilla ice cream or frozen yogurt (preferably organic or all-natural)
Instructions
- Cut each muffin in half horizontally.
- Scoop 1 1/2 tablespoons of ice cream onto the bottom half of each muffin, then place the top half back on to finish each sandwich.
- Enjoy immediately, or wrap and freeze for a make-ahead treat (see notes below).
Notes
Yield: This recipe is written for a batch of 12 muffins. Muffin size can vary, so adjust the number of sandwiches based on how many muffins you have available. Each sandwich requires about 1 1/2 tablespoons of ice cream.
Baking: If you plan to make ice cream sandwiches, you may prefer baking muffins without paper liners so they look nicer. If you use liners, remove them before slicing. If you skip liners, coat the muffin tin well with nonstick spray to prevent sticking.
Make-ahead tips: These ice cream sandwiches are best served fresh, but they freeze well. Assemble sandwiches, wrap each individually in plastic wrap, and store in an airtight freezer bag. When ready to eat, let them thaw a few minutes depending on your freezer temperature and desired softness.
