Slow Cooker Candied Sweet Potatoes

These crockpot candied sweet potatoes are one of my favorite make-ahead Thanksgiving sides. Using the slow cooker frees up oven space and keeps the dish warm and ready when you need it. As a Park Ranger’s partner, I appreciate recipes that can wait patiently in the crockpot until dinner time—no rushing required.

The slow cooker does the work: the sweet potato rounds become very tender and soak up a buttery, vanilla-spiced syrup. I recommend using kitchen tongs with plastic covers to gently lift the hot slices from the crockpot without breaking them.

Ingredients for Crock Pot Candied Sweet Potatoes

  • 3 medium sweet potatoes, cleaned and sliced into ½ inch rounds
  • ½ cup water
  • ¼ cup butter, cut into pieces
  • 10 packets sugar substitute (or to taste)
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground nutmeg

Equipment Needed

  • Slow cooker (a model with a digital timer that switches to warm is handy)
  • Sharp knife for slicing
  • Kitchen tongs with heat-resistant tips to remove slices safely

Tips

Sweet potatoes will be very soft when fully cooked; handle them carefully to avoid breaking the slices. Cooking time can vary slightly by slow cooker model and potato size. Nutrition values will vary depending on specific ingredients used.
