<li>10 lb. Boston butt</li>
<li>2 oz yellow mustard</li>
<li>4 oz meat rub</li>
<li>8 oz red wine vinegar</li>
<li>8 oz water</li>
<li>12 oz BBQ sauce</li>
<li>4 oz apricot preserves</li>
<li>4 oz honey</li>
<li>4 oz apple cider vinegar</li>
</ul>
<h3>Method</h3>
<ol>
<li>Pat the pork butt dry and coat it with yellow mustard.</li>
<li>Apply your seasoning rub evenly over the roast.</li>
<li>Preheat your smoker to 225°F.</li>
<li>Place the pork in the smoker and spritz hourly with a 1:1 mixture of red wine vinegar and water.</li>
<li>When the bark is well developed, wrap the roast tightly in foil and continue cooking until the internal temperature reaches about 198°F.</li>
<li>While it cooks, combine the BBQ sauce, apricot preserves, honey, and apple cider vinegar in a small pot and heat until smooth.</li>
<li>Unwrap, coat the roast with the apricot glaze, and return to the smoker for 10–15 minutes to caramelize.</li>
<li>Remove from the smoker and rest for at least 20 minutes before slicing or pulling to serve.</li>
