This single-serve keto lava cake is a quick, indulgent dessert for chocolate lovers. It’s perfect when you want a rich treat without almond flour or other typical keto flours.

Lava cakes are loved for their gooey, oozing center — the partially cooked interior that creates a molten texture when you cut into it. For best results, bake this cake in the oven rather than the microwave; ovens produce a firm exterior while keeping the center soft, which is exactly what you want.
I served mine with a strawberry and a light dusting of powdered erythritol, but those garnishes are optional. A scoop of keto-friendly ice cream makes an excellent accompaniment if you’d like a cold contrast to the warm center.
