One of my closest friends, Shayla, makes the best baked jalapeño poppers—loaded with creamy filling and wrapped in bacon. They’re irresistible. I’ve made them with her and on my own, but the biggest drawback has always been how time-consuming they are. I couldn’t get past how long they take to prepare, so I developed a much quicker version: a jalapeño popper dip. This recipe delivers all the flavors of traditional poppers without the fuss of stuffing and wrapping each pepper.

This dip is a must-try and rarely leaves leftovers. When a recipe disappears that quickly in our house, I know it’s worth sharing.

Ranch Jalapeno Popper Dip

Ingredients
- 10 jalapeños
- 1 1/2 teaspoons garlic powder
- 1 package dry ranch salad dressing mix
- 1 cup mayonnaise
- 2 (8-ounce) packages cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup melted butter
- Olive oil for roasting
Directions
Preheat the broiler. Halve and seed the jalapeños, then toss the halves with a little olive oil on a baking sheet. Broil for about 5 minutes, watching closely until the edges begin to char. Reduce the oven temperature to 375°F (bake).
While the peppers cool, combine the garlic powder, dry ranch mix, mayonnaise, softened cream cheese, and shredded cheddar in a large bowl. Finely chop the roasted jalapeños and fold them into the cheese mixture. Spread the dip evenly into a 9 x 13-inch casserole dish.
Combine the panko, Parmesan, and melted butter until the mixture forms moist crumbs. Sprinkle this evenly over the top of the dip. Bake for 25–30 minutes, or until the topping is golden brown and the dip is bubbly. Serve warm with your favorite chips.
This dip is fantastic with Fritos or tortilla chips. When handling jalapeños, I recommend wearing gloves—capsaicin can linger and irritate your eyes even after washing your hands. I usually seed the peppers with a regular spoon; it’s quick and easy. If you prefer more heat, leave some seeds and veins in the peppers.
