I love a good chicken casserole, and an easy, low-point version is even better.

This casserole is simple to prepare. For convenience I used a cooked rotisserie chicken from the grocery store, but leftover chicken or freshly baked chicken works well too.
Start by shredding the chicken. In a mixing bowl combine a can of Healthy Request Cream of Chicken condensed soup, fat-free sour cream, skim milk and seasonings (garlic powder, onion powder and dried parsley). Stir until smooth, then fold in the shredded chicken and a cup of peas and carrots (I used frozen).

Grease a pie pan or an 8×8 baking dish with no-stick cooking spray and add the chicken mixture. Sprinkle 1/2 cup shredded reduced-fat Mexican cheese (or reduced-fat cheddar) evenly over the top.

To top the casserole, I used reduced-fat Ritz crackers to save points. Place 10 crackers in a zip-top bag and crush them with a meat mallet or the bottom of a pan until they are in small pieces, then sprinkle the crumbs over the cheese.

Instead of drizzling melted butter over the crackers, lightly spray them with no-stick cooking spray (I used an olive oil-based spray). Using spray instead of butter saves a lot of points while still giving a golden, crispy topping.

Bake the casserole at 350°F for 30–35 minutes, or until the cracker topping is golden brown and the casserole is heated through. This makes a quick, satisfying weeknight meal.

- 10 1/2 oz. can Healthy Request Cream of Chicken condensed soup

- 1/4 teaspoon garlic powder

- 1/2 teaspoon dried parsley

Preheat oven to 350 degrees F.

In a mixing bowl combine the soup, sour cream, milk, garlic powder, onion powder and parsley. Stir to combine, then fold in the shredded chicken and vegetables.

Spray a pie pan or an 8×8 baking pan with no-stick cooking spray. Spread the chicken mixture evenly in the pan.

Sprinkle the shredded cheese over the chicken mixture.

Place the Ritz crackers in a zip-top bag and crush them with a mallet or pan. Sprinkle the cracker crumbs over the cheese.

Lightly spray the cracker topping with no-stick cooking spray, then transfer the dish to the oven.

Bake 30–35 minutes, or until the topping is golden brown and the casserole is hot. Serve and enjoy!
